Cynthia,

Dirty rice is an Afro-Creole dish, not a Cajun dish. The term "Cajun" is being wrongly disseminated around the world (including within the US). Cajuns are white immigrants to Louisiana from Nova Scotia. They don't plant rice, okra, or hot pepper in Canada, but still, these African Creole cultural terms and products are now being made known as "Cajun".

Cajun is such a marketable term now that even black Louisianans here in California are opening "Cajun" restaurants because this is what customers now think of as "authentic" Louisiana food. Sad thing...

Sort of like all the "Indian" restaurants in the UK that are actually run by Pakistanis. "Pakistani" food has no rep...but I digress

I don't expect these things to be widely known, especially "way down" in the Caribbean. But yeah, what we are dealing with are acts of cultural and economic misappropriation. Nothing new, really.

If I can get maman mwen's dirty rice recette, I'll post it!
