Quick Baked Potato

Looking for something that cooks up in about 10 minutes that’s hearty? A potato cooked quickly in a microwave oven will get dinner on the table in no time. Dress it up simply with butter and some thin slices of scallions (green onions) and you’re good to go. A dollop of sour cream or Greek yogurt – rich, thick, creamy and tangy will have you licking the fork long after the potato is gone. Want to make it even better? Grate some cheese right onto the hot cut potato and let it melt. So very good! You can make this quick baked potato to eat as a snack or as a side dish. Or, make it as a main vegetarian dish by sautéing some vegetables to pile on to the potatoes – with or without cheese.

You can substitute the English potato with sweet potatoes.

Ingredients
●    2 large potatoes
●    Oil
●    Salt & pepper to taste
●    Butter (optional)
●    Thinly sliced scallions/green onions (optional)
●    Grated cheese (optional)

Directions

1.  Wash and scrub the potatoes removing any dirt stuck on.

2.  Pat the potatoes dry then rub all over with oil and sprinkle all over with salt. Prick the potatoes all over with the tines of a fork (this is to release moisture build up).

3.  Place on a microwave-safe dish and cook for 5 minutes. Turn the potatoes over and cook for another 3 – 5 minutes. Test the potatoes for doneness by inserting a knife into the center of the potato, if it inserts easily it is done, if not, continue to cook for 1 minute intervals checking after each minute (the cooking time varies depending on the power of the microwave and the size of the potato).

4.  When done, carefully remove potato from the microwave oven, cut the potato lengthways at the top or make 2 cuts – lengthways and across, sprinkle pepper and drop a couple pats of salted butter and sprinkle with green onions and or grated cheese if using.

5.  Serve hot.
