Boulanger

It is almost certainly not the easiest job in the world to find a vegetable called by as many as four names, depending on the culture in which you locate it. If, however, you are able to do so it would probably surprise you to know that in international health circles it is also regarded as a “super-food.”

The Boulanger (Egg Plant, Aubergine, Baigan) is believed to have had its origins in India. It is widely cultivated, cheap and plentiful in Guyana. It is also known for its culinary versatility. Grilled, baked or fried it is a favorite amongst Guyanese. 

From a nutritional standpoint the Boulanger is rich in vitamins, minerals and antioxidants, properties that equip it to improve blood circulation, reduce cholesterol, prevent heart disease and blood clots. The Boulanger is also believed to serve as ‘brain food.”
