My kind of Easter Eggs

Bless her heart, my late Mother would buy all sorts of chocolate eggs for us at Easter; small ones filled with white chocolate and a yellow-dyed colouring for the yolk and large ones with little chocolate eggs inside. It was always exciting to get this sweet treat at Easter but invariably, my sister and late brother were the beneficiaries of my share because I do not like chocolate. Don’t be surprised. I told you that before (lol). The kind of eggs I like at Easter are the devilishly delicious ones stuffed with a creamy, savoury mixture of yolks, cheese, mayonnaise, and mustard. I am talking about good, old-school stuffed eggs served at tea!
